We usually try to sneak veggies into yummy food like this, but this Cupcake Day we think we all deserve a treat! These Chocolate Chip Coconut muffins are delicious - we think you and your little ones will love them!

Looking for some more child-friendly treat ideas that can be enjoyed by the whole family? As part of Cupcake Day on August 20th the RSPCA have shared their favourite recipes by celebrity chefs. One recipe that we can’t keep our eyes off is Dan Lepard’s Coconut & Chocolate Chip Muffins. Dan is an award-winning baker, food writer and photographer contributing to RSPCA in adopting a rescue dog just over four years ago. “He is just the best thing ever,” Leppard says!

 

Here at Bush Babies, we love to support causes such as the RSPCA, especially when there’s decadent muffins involved! We believe this recipe would be particularly tasty for a morning tea treat (for yourself and your little ones) or even a naughty late-night dessert! So give these chocolatey coconut muffins a go and remember to treat yo’self this RSPCA Cupcake Day!

 

What you’ll need:

 

20 grams cornflour
150 grams coconut milk, thinned to milk consistency
200 grams unsalted butter, cubed
150 grams white or brown sugar
3 eggs
2 tablespoons vanilla extract
30 grams desiccated coconut
150 grams chocolate chips
220 grams plain flour
3 level tablespoons baking powder
Extra coconut flakes

 

 

How to do it:

 

  1. Preheat your oven to 160°C fan forced and line the 12 pockets of a muffin
    tray with paper cases.
  2. Whisk the cornflour and coconut milk in a saucepan and heat until hot
    and thick.
  3. Spoon this mixture into a mixing bowl, adding the unsalted butter and
    sugar. Beat until smooth and light.
  4. Beat the eggs in one at a time until fluffy, then stir in the vanilla extract,
    desiccated coconut and most of the chocolate (save a few pieces for the
    top of the muffins).
  5. Stir the plain flour and baking powder together and stir this into the butter mixture evenly.
  6. Divide the mixture between the muffin papers, sprinkle with the remaining chocolate chips and coconut flakes, and bake for 25 minutes until golden.

 

Tips:

  • If you’re not feeling as indulgent as we do, you can remove the chocolate chips from the recipe for a healthier alternative!
  • Try adding sultanas or nuts for some extra taste and nutrition! (Make sure to watch out for any nut allergies!)
  • Once baked, you can also freeze the muffins!
